Maple-Glazed Sweet Potatoes

2 lb. sweet potatoes (6 medium)
1/3 C pure maple syrup or maple-flavored syrup
3 T. coarse-grain Dijon-style mustard
2 T cooking oil
½ tsp. salt
½ tsp. freshly ground black pepper
½ C cranberries
Preheat oven to 400. Peel and cut sweet potatoes into 1-1 ½ -inch chunks. Combine maple syrup, mustard, oil, salt and pepper; add sweet potatoes and cranberries. Toss to coat. Transfer to 13x9x2 baking dish; spread mixture evenly. Bake, uncovered for 30-35 minutes or until potatoes are glazed and tender, stirring twice.

Serves 8.
